Granola that is not only is keto but yummy too. Packed full of nuts and coconut, it's great to add into your morning cup of yogurt or just simply snack on.

Ingredients

1 cupAlmonds
1 cuppecans
⅓ cuppumpkin seeds
⅓ cupsunflower seeds
1 cupunsweetened shredded coconut
3 Tbsperythritol
3 TBSPGolden Monkfruit Sweetener
½ cupgolden flax seed meal
1egg white

¼ cupbutter
measured solid, then melted, can use coconut oil or ghee for dairy-free, I prefer salted butter for the flavor
1 tspvanilla extract
3.5 ozSemi-Sweet No Sugar Chocolate Chips
Instructions
Step 1
Put Pumpkin seeds and pecans into a food processor and pulse until slightly broken up
Step 2
Add in Almonds and pulse a couple of times.
Step 3
Pour into a mixing bowl and add sunflower seeds, ground flax and coconut.
Step 4
Melt butter and add to mixing bowl with nut mixture. Add in the sweeteners, egg white and vanilla. Stir well to combine.
Step 5
Pour mixture onto a parchment lined sheet pan and bake 15-20 mins. at 325 degrees or until slightly browned. Cool completely then add the chocolate chips.
Step 6
Store in an air tight container. Granola is good for up to a few weeks.
