Instructions

1. Melt the Chocolate

Place the chopped dark chocolate in a heatproof bowl.

Melt it over a bain-marie (double boiler) or microwave in 20-second bursts, stirring in between.

Once melted, stir in the orange zest and vanilla extract, then let it cool slightly.

2. Whip the Egg Whites

In a clean, dry bowl, whisk the egg whites with a pinch of salt until they form soft peaks.

Gradually add the caster sugar, whisking until stiff, glossy peaks form.

3. Whip the Cream

In a separate bowl, whisk the heavy cream until it holds soft peaks.

Be careful not to overwhip—it should be smooth and airy.

4. Combine the Yolks & Chocolate

Whisk the egg yolks into the cooled melted chocolate until smooth.

5. Fold Everything Together

Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it.

Then, carefully fold in the rest of the whites, keeping as much air as possible.

Finally, fold in the whipped cream until fully incorporated.

6. Chill & Serve

Spoon the mousse into serving glasses or ramekins.

Cover and refrigerate for at least 4 hours (or overnight for best texture).

Garnish with whipped cream, chocolate shavings, or candied orange zest before serving.
