Instructions

Step 1
First, get the gammon ready.

Set the oven temperature to 325°F (160°C).

Score the ham's surface in a diamond pattern, about ¼ inch deep, using a sharp Damascus chef knife. This enables the meat to be flavoured by the glaze's penetration.

The ham should be put in a big roasting pan.

Create the Glaze in Step Two

Put the honey, brown sugar, Dijon mustard, cloves, nutmeg, and ground cinnamon in a small pot. Stir the mixture over medium-low heat until the sugar melts and it turns syrupy.

Apply around half of the glaze to the ham generously with a basting brush.

Roast the gammon in step three.

To keep the ham wet while it cooks, pour pear juice or apple cider into the bottom of the roasting pan.

For one and a half hours, roast the gammon uncovered, basting it every 20 minutes with the leftover glaze. Timing is crucial because the ham must rest before being carved for exact slices.

Add the pears in step four.

Arrange the pear slices around the ham with 30 minutes remaining in the cooking time. The pears will become soft and caramelised as they absorb the glaze and juices.

Roast the gammon until it reaches an internal temperature of 140°F (60°C). This step requires a meat thermometer.
