Instructions
Step 1
- Turn the oven to 325*

Step 2
- Add cream, vanilla, and salt to a pot. Simmer for about 5 minutes.


Step 3
- Mix eggs and sugar together in a separate bowl.


Step 4
- Slowly add in a little of the cream mixture at a time until fully combined.
Step 5
- Pour through a sieve into an oven-safe container or multiple small ramekins


Step 6
- Add the container into a larger dish and pour a water bath of boiling water to about halfway up.
Step 7
- Bake for at least 40 minutes

Step 8
- When finished cooking the center should jiggle slightly but not the edges.
Step 9
- Allow to cool in fridge at least 4 hours, ideally overnight.

Step 10
- Sprinkle sugar on top and melt with blow torch
