Instructions

Step 1
In a large skillet over medium heat combine olive oil, shallots, leeks and butternut squash and cook for 10 minutes until tender
Step 2
Then add mushrooms, garlic, salt and pepper and continue cooking for 3-5 minutes stir in wild rice until warmed through divide the rice mixture and spinach between four bowls enjoy
