Instructions
Step 1
First peel your zuchinnis into noodles and set aside
Step 2
Next in a bowl combine the vegan ricotta cheese, the 1 cup of basil or parsley and the garlic powder and mix well until combined
Step 3
Next in a dish lay out two ribbons of zucchini and place a spoonful of the ricotta filling in the center then place two more pieces of zucchini noodles on top in a criss cross pattern and fold it up securely and set aside and repeat with the remaining zucchini noodles and ricotta until you have used it all up
Step 4
Pre heat your oven to 350*f and in a baking dish spread out a layer of the marinara sauce and then place all of the raviolis into the dish on top and sprinkle with the cheese and the 1 tbsp of fresh basil or parsley then bake it in the oven for 5-7 minutes or until the cheese is slightly melted and golden
Step 5
Let it cool a little bit and then serve with your favorite side dish enjoy
