Instructions
Step 1
Peal oranges,cut up and add the peal of 1 to make approx 600g. Add salt. Add to air free bag for 5 to 7 days. The bag should inflate. If mould appears bin.

Step 2
Strain out fermented orange juice.
Make orange blossom tea with water and orange blossom steeping for 5 mins.
Strain out 620g.
Add agave nector
Step 3
Allow to cool to room temperature and add 90g of fermented orange juice
Step 4
Add to pressure resistant plastic bottles.
Squeeze out any air
Leave until pressure builds up
Step 5
With the waste pulp and peel make fermented orange marmalade
