This vibrant crispy air fryer veg slaw is a hit with all of the family. So it’s simple and quick to make, looks fantastic and tastes even better, gone are the days of soggy overcooked veg.

Step 1
Start by thinly slicing half a red cabbage, then separate the leaves before adding to a mixing bowl. Next peel two carrots and cut into ribbons or thin slices before adding them to the mixing bowl along with the carrots. Then I peeled and thinly sliced one red apple and added it to the mixing bowl. Spray some olive oil over your veggies then shake the mixing bowl so they are all coated well in the oil.
Step 2
But remove the crisp plate from the air fryer drawer before you add the mixed vegetables. Cook for 10 minutes on 180c giving your veggies a good stir or shake a few times during the cooking.
Step 3
So whilst the veggies are cooking, make your dressing with a tablespoon each of whole grain mustard, runny honey and cider vinegar. Then mix the three ingredients together well.
Step 4
Finally serve your air fryer veg slaw in a bowl, pour over the salad dressing and add your chopped nuts and a sprig of fresh parsley over the top.
