Instructions

Before Preparing Ingredients

Step 1
Soak rice for 30 minutes.- Rinse 3x or until water is clear
Step 2
Carefully remove grape leaves from jar.- Carefully peel apart and rinse in strainer. Let drip for a little bit.

Filling

Step 3
- Put all ingredients except meat and rice in food processor and puree. - Drain rice. - Add beef and lamb into a large mixing bowl. - Add puree to meat mixture. Mix until incorporated. Do not over mix. - Cook a test piece to check for seasoning BEFORE adding rice. - Once seasoning is good, add rice and hand mix until incorporated.

Assemble

Step 4
- Line bottom of braiser with small and torn leaves. - Place one leaf on a cutting board, vein side up. - Take the appropriate amount of meat mixture based on the size of the leaf and place in the middle of the leaf, shaping into a log. - Fold in sides, then bottom. Roll up. Be careful not to roll too tight to leave room for expansion when the rice cooks. Otherwise the leaves will break when cooking. - Place completed grape leaves in braiser. Do not stack more than two high.

Cooking

Step 5
Combine broth and lemon juice then pour over grape leaves. If more liquid needs to be made, combine the liquids before adding to ensure it gets mixed thru.. Place a plate on top, cover with lid and cook for about 40 minutes on medium low or a light simmer.
