Instructions

Step 1
First, get the crust ready: Set the oven temperature to 325°F (163°C). Put the sugar, melted butter, and graham cracker crumbs in a mixing basin. Sturdily press the mixture into a 9-inch springform pan's bottom. After ten minutes of baking, take the crust out of the oven and let it cool.
Step 2
Get the filling ready: Cream cheese should be beaten until creamy and smooth in a large mixing basin. Add the sugar gradually while beating until thoroughly blended. Add the vanilla extract and stir. Beat thoroughly after adding each egg one at a time. Add the heavy cream and sour cream and stir until smooth and well blended.
Step 3
Bake the cheesecake: Cover the chilled crust with the filling. To stop water from leaking in, cover the springform pan's exterior with aluminium foil. Transfer the pan to a bigger baking dish and pour hot water into the dish until the water comes halfway up the springform pan's sides. Bake until the centre is firm but still somewhat wobbly, about 1 hour and 10 minutes. After turning off the oven, leave the door slightly open for an hour so the cheesecake may cool inside.
Step 4
Allow the cheesecake to cool: After taking the cheesecake out of the oven, allow it to cool fully at room temperature. Before serving, let it sit in the refrigerator for at least 4 hours or overnight.
