Who even knew that making cake in the air fryer was even an option or that it would be so easy and turn out so yummy. I certainly didn’t!

Instructions

Step 1
start by sieving the flour into a large mixing bowl. And add your ingredients to a mixing bowl one by one in order and mix with your hand whisk. When ready pour your mixture into your silicone moulds until about two thirds full (they need space to rise a little), smooth over the top with a teaspoon for an even finish and place in your air fryer on 160c on bake mode for 20 minutes.
Step 2
While the cakes are cooking, slice your strawberries ready for the topping. When cooked carefully remove your cakes from the air fryer, be extra careful as the basket will be hot. Then carefully remove from the silicone moulds. and cool your cakes on your cooling rack for about 5 to 10 minutes.
Step 3
Slice your cakes in half through the middle and spread on a thick layer of strawberry jam to one side and then the clotted cream on the top. Place the other half of the cake on top to make a sandwich.
Step 4
Spread on some of the clotted cream to the top of you air fryer Victoria sponge and add your sliced strawberries to decorate and scatter a teaspoon of icing sugar, through a sieve to finish.
