Instructions
For the shortbread crust
Step 1
Cut butter into small cubes. Combines flour, sugar, and nuts. Mix butter into flour mixture until a sandy texture. Press into 9"x13" pan. Bake for 15-20 minutes at 350 degrees.
For the filling
Step 2
Cream together butter and sugar. Add eggs and mix. Gradually mix in the mashed sweet potatoes. Add evaporated milk, vanilla, and salt and mix well. Pour into crust and bake for 30-35 minutes at 350 degrees. Cool.
For the haupia topping
Step 3
Thaw coconut milk as instructed. Combine sugar and cornstarch. Stir in water and blend well. Stir sugar mixture into thawed coconut milk. Cook and stir over low heat until thickened. Cool slightly. Pour haupia over pie filling and refrigerate.
