Ingredients
4 servings

1 poundpork tenderloin
trimmed and cut into 1-inch pieces

1 tablespoonextra-virgin olive oil

1 teaspoondried oregano

1 ½ teaspoonsalt

2 ½ teaspoonground pepper

1 cupquinoa
rinsed
1 x 11fresh zucchini and yellow squash
package sliced

1 pintcherry tomatoes

sun-dried tomatoes in oil
+6 1 cup drained julienne-cut

1 cupfrozen chopped onions

1 cupreduced-sodium vegetable broth

½ cupdry white wine

1 tablespoongarlic paste

1 ½ cuphalf-and-half

¼ cupgrated parmesan cheese

¼ cupfresh flat-leaf parsley leaves
Instructions
Step 1
Place the pork pieces in a 6-quart slow cooker. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
Step 2
Layer the quinoa, zucchini and squash, cherry tomatoes, sun-dried tomatoes, and onions over the pork.
Step 3
Pour in the broth and white wine. Add the garlic paste. Ensure the quinoa is submerged in the liquid to cook evenly.
Step 4
Cover and cook on High for 3 hours or on Low for 6 hours, until the vegetables are tender, the quinoa is cooked, and the pork reaches an internal temperature of 145°F.
Step 5
Turn off the slow cooker. Stir in the half-and-half; cover and let stand for about 2 minutes until warmed through.
Step 6
Spoon the pork and quinoa mixture onto plates. Sprinkle with grated Parmesan cheese and parsley before serving.
