Instructions

Step 1
Place the pork pieces in a 6-quart slow cooker. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.​
Step 2
Layer the quinoa, zucchini and squash, cherry tomatoes, sun-dried tomatoes, and onions over the pork.​
Step 3
Pour in the broth and white wine. Add the garlic paste. Ensure the quinoa is submerged in the liquid to cook evenly.​
Step 4
Cover and cook on High for 3 hours or on Low for 6 hours, until the vegetables are tender, the quinoa is cooked, and the pork reaches an internal temperature of 145°F.
Step 5
Turn off the slow cooker. Stir in the half-and-half; cover and let stand for about 2 minutes until warmed through.​
Step 6
Spoon the pork and quinoa mixture onto plates. Sprinkle with grated Parmesan cheese and parsley before serving.​
