For the peach jam

1can peaches
drained

20gcaster sugar

20gsoft brown sugar

½ tspcinnamon powder

½ tspvanilla

3 TbspCornflour
slurry
For the cake batter
Instructions
Make the peach jam
Step 1
Drain peaches and pour in small saucepan
Step 2
Add vanilla, caster and brown sugar, cinnamon powder and cook on medium until sauce thickens or peaches can be mashed with potato masher (20-30 mins)
Step 3
Add cornflour slurry to turn peach sauce into jam
Step 4
Cool and set aside peach jam
Make the cake batter
Step 5
Preheat your oven to 180C/160C Fan and line a 9x13" Traybake tin with parchment paper.
Step 6
Beat butter and both sugars together until fluffy
Step 7
Add eggs, vanilla and mix until combined
Step 8
Add flour and stir just until it's mixed
Step 9
Transfer batter to baking tray
Step 10
Dollop peach jam randomly in batter, add small chunks of soft brown sugar, and swirl
Step 11
Bake in oven for 40-45 mins or until cooked to the middle
Step 12
Allow to cool for 20 mins before cutting
