Step 1
1. Preheat oven to 350°F. Coat a rectangular 3-quart baking dish with nonstick cooking spray. In a large bowl stir together zucchini, peppers, baking mix, egg, Parmesan, oil, parsley, oregano, salt and garlic powder. Spread in baking dish. Sprinkle with Cheddar.

2. Place baking dish in oven. Bake, uncovered, 35 minutes or until set. Serve warm
