Instructions

Step 1
Preheat the Oven: Set your oven's temperature to 350°F, or 180°C. Line your cake pan with parchment paper or use nonstick spray to grease it.
Step 2
Combine Wet Ingredients: Beat the yoghurt, sugar, and eggs in a big bowl until they are smooth. Mix thoroughly after adding the vanilla essence and vegetable oil.
Step 3
Mix Dry Ingredients: Sift the flour, baking powder, and salt together in an other bowl. Stirring just until mixed, gradually add the dry ingredients to the wet mixture. Don't mix too much.
Step 4
Add Lemon Zest (Optional): For a zesty, fresh taste, fold in the lemon zest if using.
Step 5
Bake: Use a spatula to smooth the top of the mixture after pouring it into the prepared cake pan. A toothpick inserted in the centre should come out clean after 35 to 40 minutes of baking.
Step 6
Cool: After the cake has cooled in the pan for ten minutes, move it to a wire rack to finish cooling.
