Instructions

Step 1
Line a baking sheet with aluminum foil. Cook bacon in a preheated oven 400 degrees 20 to 25 minutes. Or to your desired crispiness.
Step 2
Peel and chop potatoes into the bite size chunks.
Step 3
To a dutch oven add 2 tbs of butter. Sauté diced onion until translucent.
Step 4
Add 4 cups of broth along with salt and pepper. Add chopped potatoes cook over medium heat for 7 minutes until almost fork tender.
Step 5
Remove 2 cup of potatoes from the pot without liquid. Smash the potatoes in the pot.
Step 6
Create a slurry by mixing milk and flour together. Add slurry to the pot. Return the potato chunks cook for 2 to 3 minutes more until desired thickness.
Step 7
Garnish with chives, chopped bacon, cheese, and more sour cream.
