Instructions

Step 1
1. Prepare the filling: Heat oil in a pan over medium-high heat. Brown the beef in batches, then set aside.
Step 2
2. Cook the vegetables: In the same pan, add onions, garlic, and carrots. Cook until softened, about 5 minutes.
Step 3
3. Make the sauce: Sprinkle flour over the vegetables and stir well. Add ale, beef stock, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Stir and return the beef to the pan.
Step 4
4. Simmer: Reduce heat, cover, and let it simmer for 1.5–2 hours until the beef is tender and the sauce thickens. Let cool.
Step 5
5. Assemble the pie: Preheat oven to 200°C (400°F). Roll out the pastry and line a pie dish with half of it. Add the cooled filling, then cover with the remaining pastry. Seal the edges, cut a small hole in the top, and brush with beaten egg.
Step 6
6. Bake: Place in the oven and bake for 25–30 minutes until the pastry is golden brown.
Step 7
7. Serve: Let it rest for a few minutes before serving with your favorite sides.
Step 8
Enjoy your homemade steak and ale pie! Let me know if you'd like any modifications.
