Air Fryer Scotch Eggs

These air fryer Scotch eggs are a healthier twist on the classic British favourite! Wrapped in seasoned sausage meat, with chopped bacon, coated in golden breadcrumbs, and air fried to crispy perfection.

Instructions

Step 1
put your two fresh eggs directly into your air fryer basket. Set the temperature to 180c and cook for around 8 minutes depending on how runny you like your yolks.
Step 2
Then remove your eggs from the air fryer and plunge into iced water and leave to cool.
Step 3
Next, place the sausage meat into a mixing bowl and chop in the bacon rashers. Then add in your dried rosemary and season generously with salt and pepper.
Step 4
So using your hands, fully combine the mixture. Separate the sausage meat into two evenly sized balls. Then place both on to a piece of baking paper and flatten them to create two large circles, about 10cm in diameter. Then set aside.
Step 5
Put the flour on a plate and season, then crack the raw egg into a bowl and beat, and the panko breadcrumbs onto the final plate.
Step 6
So remove the egg shells from the cooled cooked eggs. And coat them in the flour, Then wrap the eggs in the sausage and bacon mix, and mould the mixture around the eggs.
Step 7
Then roll each scotch egg in the flour mix first, followed by the egg wash and finally the panko breadcrumbs.
Step 8
Spray each scotch egg with olive oil and place directly into the air fryer drawer, leaving the crisper pates in. Then cook on 200c for around 20 minutes, turning half way to crisp them evenly.
Step 9
Serve your scotch eggs with salad leaves and a dollop of piccalilli and enjoy.
