Dad's Meatloaf

Always trying to recreate what my mother used to make, this is my best variation. Try another flavor of stuffing mix if you'd like. Another variation is to use italian sausage instead of the brat; use ketchup, pasta sauce, or even salsa instead of barbecue sauce. One egg usually works in a pinch. Got roasted red peppers or some diced tomatoes? Throw em in. Goes really well with mashed potatoes.

Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
Remove any sausage casings. Crumble hamburger and sausage. Mix with other ingredients in large bowl. Be careful not to overmix or compress the meatloaf too much.
Step 3
Press the mix into a glass loaf pan. (Metal pans, muffin tins, etc will work, but each changes the cooking time.)
Step 4
Bake for 1 hour and 10 minutes to 1 hour and 15 minutes, or until done. A little crustiness around the top edges is a good thing.
Step 5
Allow to rest at least 5 to 10 minutes. Carefully remove from loaf pan and place on serving dish. Cover with foil with shiny side facing inwards if not yet ready to serve.
