Combine water, yeast, brown sugar, and oil. Let sit 5 mins then add flours and salt. Combine until mixed, cover with a shower cap, let sit for 30 mins. After 30 mins do a set of stretch and folds and let rest 20-30min. While waiting, combine butter and honey, melt and stir unit combined. Place in fridge. After time, pour melted butter honey mixture on top of dough. MUST be room temp. Don’t use hot. Coil fold until the butter mixture is combined. Let sit 20 minutes. Coil fold, let proof until dough has doubled Gently dump dough onto floured surface. Carefully stretch out dough, until 9x13 shape. Cut 8 buns and bake on parchment dusted with flour. Sprinkle tops with flakey sea salt. Bake 435 for 13-15min. Take out at 210. High hydration dough.
