Instructions
Step 1
In a saucepan, whisk together the cocoa powder, sugar and espresso powder. Slowly add the milk and cream, stirring to combine. Heat the mixture over a medium heat until warm
Step 2
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the warm chocolate mixture to the yolks, whisking continuously
Step 3
Pour the mixture back into the saucepan and cook over a low heat, stirring continuously, until thickens slightly
Step 4
Remove from heat and stir in chocolate chips until fully melted
Step 5
Let the mixture cool, then refrigerate for at least 4 hours or overnight
Step 6
Churn in an Ice Cream machine according to the manufacturers instructions. Freeze for 2 hours before serving
