For the cauliflower bites

1 headcauliflower
medium, cut into florets

¾ cupall-purpose flour
or gluten-free alternative

¼ cupcornmeal
or breadcrumbs, for extra crunch

1 tspgarlic powder

1 tsponion powder

½ tspsmoked paprika

½ tspsalt

¼ tspblack pepper

¾ cupplant-based milk
unsweetened

1 Tbspolive oil
optional for extra crispiness

½ cupbuffalo hot sauce
adjust to taste

1 Tbspvegan butter
melted, or olive oil, to mix with the hot sauce
For the ranch dip (optional but recommended)

½ cupvegan mayo

¼ cupunsweetened plant-based milk

1 Tbsplemon juice
or apple cider vinegar

½ tspgarlic powder

½ tsponion powder

1 Tbspfresh parsley
chopped

Instructions
Preheat the oven
Step 1
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.



Make the batter

In a large bowl, whisk together flour, cornmeal or breadcrumbs, garlic powder, onion powder, paprika, salt, pepper, and plant-based milk until smooth.








Coat the cauliflower

Dip each cauliflower floret into the batter, shake off excess, and place on the baking sheet in a single layer.



Bake the first round

Bake for 20–25 minutes, flipping halfway through, until lightly golden and starting to crisp.
Toss in buffalo sauce

Mix buffalo hot sauce with melted butter or oil. Remove the cauliflower from the oven, toss in the sauce to coat, then return to the oven for another 10–15 minutes.



Make the ranch dip

While the bites finish baking, whisk together all the ranch ingredients in a small bowl. Chill until ready to serve.
