Step 1
Prepare the pasta:
Bring a big pot of water that has been salted to a boil. Cook the tagliatelle as directed on the package until it's al dente, which should take 8 to 10 minutes. After draining the pasta in a colander, set aside 1/2 cup of pasta water.
Step 2
To make the sauce:
Melt the butter in a big skillet over medium heat. Sauté the minced garlic for one to two minutes, or until it becomes aromatic. Bring to a slow simmer after adding the heavy cream. Cook for two to three minutes, stirring now and then.
Step 3
Pasta and Sauce Combination:
Toss the cooked tagliatelle gently in the skillet to cover it in the rich sauce. Stirring constantly, gradually add the grated Parmesan cheese until it melts and the sauce smoothes out. To get the right consistency if the sauce is too thick, add a little of the pasta water you set aside.
Step 4
Serve:
Add salt and freshly ground black pepper to taste before serving. Add a little more Parmesan cheese and chopped parsley as garnish. Serve hot right away, with sautéed mushrooms or grilled chicken on the side if desired.
