Instructions

Step 1
In a large cauldron or pot, melt the pork lard over medium heat. Add finely chopped onions and sauté until golden and soft.
Step 2
Add the cubed beef to the onions and sear on all sides until nicely browned.
Step 3
Add garlic, ground paprika, whole black pepper, bay leaves, and salt. Stir thoroughly to coat the meat and onions with the spices.
Step 4
Add chopped tomatoes and bell peppers. Cook for 10 minutes until the veggies start to break down.
Step 5
Pour in enough hot (ideally boiling) water to cover all ingredients. Simmer for about 1.5 hours, or until the meat is tender.
Step 6
Add peeled and cubed potatoes to the pot and simmer for another 25–30 minutes until potatoes are soft.
Step 7
Stir in dried marjoram at the end of cooking, and adjust salt and pepper to taste.
Step 8
Serve with thick slices of rustic bread.
