Kielbasa

sorted and rinsed

3 cupsBroth
Vegetable or Chicken

1Onion
medium, diced

3 clovesGarlic
minced

1Bell Pepper
red, diced

1 tspCumin

1 tspSmoked Paprika

1 tspChili Powder

1Bay Leaf

1 cupCanned Diced Tomatoes
drained, you can use liquid with broth

1 TbspRed Wine Vinegar

Salt

Pepper
To taste

Cilantro
Fresh, For garnish, optional
Instructions
Step 1
Turn on instant pot to saute mode. Add some oil and brown the kielbasa. Remove and set aside.



Step 2
Saute onion, bell pepper and garlic. Season with a pinch of salt.







Step 3
Turn off Instant Pot. Add the black beans, broth, cumin, smoked paprika, chili powder, and bay leaf. Season with salt and pepper








Step 4
Layer the diced tomatoes on top without mixing them in (this prevents burning).

Step 5
Close the lid, set the valve to sealing, and pressure cook on high for 35 minutes.

Step 6
Allow a natural pressure release. Stir in the red wine vinegar and adjust seasoning.



Step 7
Garnish with fresh cilantro before serving.
