450g2% Cottage Cheese

8gNutritional Yeast

400gEgg Whites

Instructions
Step 1
Cook fajita veggies in a pan over medium-high (7/10) heat with a lid until softened, then sauté uncovered until browned.
Step 2
Add turkey and beef to the same pan. Brown one side, then flip and break into pieces.
Step 3
Stir in taco seasoning, cottage cheese, and nutritional yeast. Cook on low to reduce liquid, about 10 minutes. Transfer to a bowl to cool.
Step 4
In the same pan, lightly scramble egg whites and eggs. Season with sea salt. Cool completely.
Step 5
Once cooled, divide meat and eggs evenly into 6 portions. Fill each tortilla with 1/6 of meat and egg mixture, then roll into burritos.
Step 6
Wrap each burrito in foil and freeze.
Step 7
To reheat: Remove foil, wrap in a paper towel, microwave for 2:30 (flip halfway), then air fry at 360°F for 10–12 minutes until golden.
