Instructions
Step 1
Butterfly chicken and season with salt, pepper, Paprika, garlic powder, onion powder and dried oregano.
Step 2
Heat sundried tomato oil and olive oil up in a large pan.
Step 3
Sear chicken on both sides
Remove chicken from pan once golden on both sides.
Step 4
Add onion and garlic to pan and cook for 3-5 mins until arromatic
Step 5
Add mushrooms and dash of white wine to deglaze the pan
Step 6
Add the Cherry tomato's, the sundried tomato's, some dried oregano to taste and the thickened cream. Stir all together and let simmer for all the flavours to mix together
Step 7
Add stomach and stir until wilted. Then add parmesan cheese and stir
Step 8
Add chicken back into the pan and cook for another 5-10mins
Step 9
Serve with rice or mashed potato's and crusty bread
