Step 1
1. Melt the butter in a large pot over medium-high heat, then add the carrots, onions, and garlic. Sauté the veggies for about 5 minutes, until they begin to soften. 2. Sprinkle the flour over the veggies and cook for 1 minute more. Stir in the broth, potatoes, thyme, salt, and pepper. Bring to a simmer and cook for 5–10 minutes, until the vegetables are cooked and the soup has thickened slightly. Add the plant-based milk and peas and heat through, another 2–3 minutes. Serve hot.
