Instructions
Step 1
Combine oats, sugar, oil, walnuts, egg, orange peel, and salt in a large bowl until blended. Cover and refrigerate overnight.
Step 2
Preheat oven to 350°F. Lightly grease cookie sheets or line with parchment paper.
Step 3
Melt chocolate chips in top of double boiler over hot (not boiling) water; keep warm.
Step 4
Shape oat mixture into marble-sized balls. Place 2 inches apart on prepared cookie sheets.
Step 5
Bake 10 to 12 minutes or until golden and crisp. Cool 10 minutes on wire racks.
Step 6
Dip tops of cookies, one at a time, into melted chocolate. Place on waxed paper; cool until chocolate is set.
