Instructions

Step 1
In a medium saucepan, combine brown rice and vegetable broth. Bring to a boil over medium high heat
Step 2
Once boiling reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed
Step 3
In a separate skillet, heat olive oil over medium heat. add minced garlic and sauté for about 30 seconds, until fragrant
Step 4
once the rice is cooked, fluff it with a fork and stir in the lemon juice, lemon zest, salt, and black pepper
Step 5
Add the sautéed garlic to the rice and mix until well combine. garnish with chopped parsley before serving
