Sweet and Spicy Gochujang Veggies

I whipped up this recipe just using some odds and ends in my fridge. I had a bag of frozen veggies that I needed to use and was shocked how much flavor I was able to get into them.
This recipe has a great balance of sweet, spicy, and some nice crunch from the veggies. It's a super easy dish that you can cook in 10-15 minutes and makes a perfect side dish!

Step 1
In a pan over medium high heat add your olive oil followed by your frozen vegetables.

Step 2
Lay your vegetables on the pan so they are all cooking, but do not move them. Let them sit for 3-5 minutes to develop some nice color.
Step 3
While you wait, to a bowl, add your soy sauce, rice wine vinegar, sesame oil, 1 tbsp ginger powder, gochujang sauce and red chili flakes. Stir to combine.

Step 4
Add your sauce mixture to the pan and toss your vegetables in it. Bring the sauce to a light simmer and simmer for 5 minutes.
Step 5
Add in your remaining 1 tbsp ginger powder, garlic powder and salt. Then add in your brown sugar. Stir everything to combine and let simmer for 3-5 more minutes.

Step 6
Turn off the heat and add a few sliced green onions to the pan. Stir to combine for 1 minute.

Transfer everything to a serving bowl. Top with furikake and more green onions. Enjoy!
