Instructions

Step 1
Heat oven to 350°F (180°C).
Step 2
Grease 10 standard muffin tins well with a high smoke point oil (coconut) or use silicone muffin cups
Step 3
Melt the butter (in the microwave or appliance of choice).
Step 4
Mash the 3 bananas and add the butter, egg, yogurt, cinnamon, and vanilla extract. Mix well
Step 5
In a separate bowl, mix together flour, baking soda, salt (if using).
Step 6
Fold the dry ingredients into the banana mixture and stir to combine, don't overmix. The batter will be thick!
Step 7
Spoon batter into prepared muffin pans. Fill with ~ 3 tbsp of batter or about 3/4 full as they will grow in the oven.
Step 8
Bake in the oven for ~20-22 minutes, until the tops bounce back when touched. Or until they are lightly browned. If your oven bakes hot check at 18 minutes depending on how much you filled them.
