Step 1
In a wide frying pan, cook onions in 4 tablespoons of the butter over medium high heat until limp. Transfer to a Dutch oven or 8-quart pan.
Step 2
In the frying pan, brown the meat. Add to onions.
Step 3
Place the garlic, cinnamon sticks, and pickling spice in a cheesecloth bag. Add to the meat and onion mixture along with the tomato paste, water, salt, and pepper. Cover and simmer, stirring occasionally, for about 3 hours or until the flavors are blended and sauce has thickened.
