Makes 4 x 350 g dough. He uses 350g for a 8x10 pan. You have a larger pan (10X14). You probably need close to 550g.

Instructions

Step 1
Mix sourdough, water and flour and autolyse for 30min
Step 2
Add salt and oil and mix well
Step 3
Bulk ferment 4 hours
Step 4
Ball out and pan dough
Step 5
Fridge proof for 12 hours
Step 6
Take out and let proof at room temp for 12 hours
Step 7
Dimple, top and bake at 450F
