Step 1

Boil a kettle

Heat a large wide based pan
Step 3

Add the sliced courgette, sliced garlic, ras el hangout, ground cumin and a pinch of salt

Dissolve the beef stock, tomato paste in boiled water

Once fragrant add the chopped dates to the pan

While the sauce is thickening fluff the couscous
