French New Potato Salad with Grilled Asparagus & Goat Cheese
The goat cheese can be replaced with feta cheese if you prefer. The coarse-grain mustard used adds some texture and acidity.

Ingredients

900gnew potatoes
scrubbed and rinsed

250ggreen asparagus

1 Tbspolive oil

½ tspflaky salt

70gmâche

1 dlshelled pistachios

250gblackberries

200ggoat cheese
chèvre

Instructions
Step 1
Scrub the potatoes. Boil until soft in salted water. Let the potatoes cool and cut them into thick slices.
Step 2
Trim the asparagus and mix with oil. Grill the asparagus in a grill pan until nicely colored. Season with flaky salt. Cut the asparagus into smaller pieces.
Step 3
VINAIGRETTE: Peel and finely chop the shallot. Add the shallot, both types of mustard, vinegar, and honey. Whisk in the oil and season with salt and pepper.
Step 4
Toss the potatoes with half of the vinaigrette, mâche salad, and asparagus. Place on a large serving platter and sprinkle with pistachios, blackberries, and goat cheese. Serve the remaining dressing on the side.
