Instructions

Step 1
Cut strawberries into small pieces, place in pan with sugar and lemon juice.
Step 2
Heat on medium while stirring. Once softened, crush with fork to desired consistency.
Step 3
When sauce thickens, transfer to bowl and cool.
Step 4
Boil water. Meanwhile, combine glutinous rice flour and potato starch (skip starch if using shiratamako) in bowl. Add water gradually until mixture forms a stable ball, then knead until soft as an earlobe.
Step 5
Roll dough into thin log (about 1cm thick). Cut into 1cm pieces and prepare bowl of ice water.
Step 6
When water is boiling, roll dough into balls and drop them in. Roll 5-6 at once to save time. Stir gently to prevent sticking.
Step 7
Once balls float, cook for 30 seconds.
Step 8
Scoop out and cool in ice water for a few minutes.
Step 9
Add strawberry sauce to serving cup. Drain mochi balls, shake off excess water, and mix into sauce (reserve some for topping). Add boiled adzuki beans and optional ice cubes. Mix milk and condensed milk in a jug, then pour into glass.
Step 10
Optional: Decorate with whipped cream, strawberries, adzuki beans and remaining mochi balls. Mix well before drinking.
