Apple & dark chocolate mousse cake

Instructions
Step 1
Peel and roughly chop the apples, and boil them in water until very soft (about 15-20 minutes).




Step 2
Break the chocolate bars and melt them in the microwave (about 1- 2 minutes). Do it in 30 second intervals, as you don’t want to overheat or burn the chocolate… just melt it.


Step 3
Sieve the apples, then add them and the melted chocolate to a food processor and blend it all together. You want a smooth homogeneous mix with no lumps.


Step 4
Pour the mix into a 15 cm silicone mould (or a cake tin lined with parchment paper) and refrigerate for at least 8 hours (ideally overnight). You can slightly oil the mould with a neutral flavour oil for easier unmoulding.


Step 5
Unmould it on a plate, slice and enjoy! Optional: you can dust the top with cocoa powder or icing sugar (or both) right before serving
