Instructions

Step 1
Preheat Oven: Set to 375°F (190°C).
Step 2
Sauté Spinach & Garlic: In a skillet, cook spinach and garlic in 1 tbsp olive oil until wilted. Let cool.
Step 3
Butterfly & Fill Chicken: Slice chicken breasts horizontally without cutting through. Stuff with spinach, roasted peppers, and mozzarella.
Step 4
Secure & Season: Use toothpicks to close. Rub with olive oil, Italian seasoning, salt, and pepper.
Step 5
Sear Then Bake: Sear in a hot skillet for 2–3 minutes per side. Transfer to oven and bake for 15–20 minutes until internal temp hits 165°F (74°C).
Step 6
Rest & Slice: Let sit 5 minutes, then slice and serve.
