Instructions
Step 1
Pan-fried eggplants with two tablespoons of oil until Brown on each side then set aside
Step 2
Pan fried garlic with one tablespoon of oil add in pork mince, fry until fragrant
Step 3
Add in the cooked eggplant and stir to combine
Step 4
Add in one cup of water to simmer over low heat until half cup of water remains
Step 5
Add in 1 tablespoon of oyster sauce, 1 teaspoon of soy sauce and the cornstarch mixture to thicken
Step 6
Garnish with fresh chilli and spring onion
