Instructions
Step 1
Heat Butter and Olive oil in a large pan over medium heat. Add the leek, garlic, chili flakes and pinch of salt and cook with lid on. Stirring occasional (12-15 min) until the leaks are soft and beginning to take on color.
Step 2
Stir in pasta and toast for a couple of minutes. Add in the vegetable stock and miso and bring to a simmer. Cook the pasta with the lid off until al dente, add more stock as needed. Stir in lemon juice and 1/2 the lemon zest, salt and pepper.
Step 3
Serve with remaining lemon zest and chili flakes
