For the chicken

500gchicken thighs
boneless, thinly sliced

0.5lemon

3cloves of garlic

1 tspcoriander
heaped

1 tspcumin
heaped

½ tspcardamom powder

15cardamom pods

½ tspsmoked paprika

¼ tspsalt

¼ tspblack pepper
For the sauce
Instructions
Step 1
Place cardamom pods into a motor and pestle and grind until the pods are separated from the see inside. discard the shell.
Step 2
Create a marinate with the lemon juice, garlic and spices. Place into a small bowl and mix until you have a consistent paste.
Step 3
To cook the chicken: In a large plastic bag or bowl, combine the chicken and marinade, mixing until the chicken is fully loaded. Make immediately or marinate 1-2 hours or (ideally) overnight. Heat a large heavy duty skillet to high heat for at least 2 minute. Pour 1 teaspoon olive oil to the pan. Cook the chicken uncovered for 4-8 minutes per side or until the centre is fully cooked. Rest for 5 minutes then cut and serve.
Step 4
To make the jalapeno yogurt sauce. Blitz it! Place all the ingredients in a blender or food process and blend for 1 minute or until fully combined.
