Roast Chicken Shepherd’s Pie with Sweet Potato Mash

Ingredients

The Base

2 cupschicken
Leftover roast, shredded or chopped

1onion
diced

1carrots
chopped

2 clovesgarlic
minced, optional

peas
or frozen greens

1 Tbspolive oil

1 Tbsparrowroot

1 cupchicken broth
or veggie broth
¼ cupfrom roast chicken
Drippings

1 tspthyme
or mixed herbs

salt
to taste

pepper
to taste
The Mash
Instructions
Step 1
In a large skillet, melt butter over medium heat. Sauté onion and carrot until tender (about 8 minutes). Add garlic and cook another minute. Stir in flour to make a quick roux, then slowly pour in broth while stirring. Add herbs, salt, and pepper. Let it simmer and thicken. Stir in chicken and peas. Turn off heat.
Step 2
In a bowl, mash the sweet potatoes with butter, milk, and optional cinnamon. Whip until smooth and season with salt to taste.
Step 3
Pour the chicken mixture into a baking dish. Spoon the sweet potato mash on top and spread it gently like a cozy blanket. Drag a fork across the top for some rustic texture.
Step 4
Bake at 375°F (190°C) for 20–25 minutes, or until bubbly and golden on top. You can broil for the last few minutes for extra caramelization.
