Instructions

Step 1
1. Preheat oven to 350°F. Lightly grease and flour an 8x8-inch glass square pan.

2. Cream butter and sugar until light and fluffy (about 3 minutes).

3. Add eggs one at a time, mixing well after each.

4. Stir in strawberry extract.

5. In a separate bowl, whisk together cake flour, baking powder, and salt.

6. Add dry ingredients to the wet mix in two parts, alternating with the milk. Mix just until smooth.

7. Fold in mashed strawberries or jam, if using.

8. Pour batter into pan, smooth top, and bake for 30–35 minutes (a toothpick inserted in the center should come out clean).
