Ingredients: Egg yolks 50% sugar 50% salt _______ Instructions: Separate egg yolks from whites. Mix equal parts sugar and salt in a flat dish. Create small indentations (cravices) and place one yolk in each. Cover completely with the rest of the salt-sugar mix. Cure in the refrigerator for 5 days. Rinse gently with cold water. Optionally: Dry in the oven on the lowest setting for 2 hours. _______ Texture: Firm, dry, and grateable—similar to hard cheese. _______ Use for: Grating over pasta, salads, risotto, or avocado toast. _______ Tip: Save your egg whites for meringues, scrambles, or baking!
