Freekeh and Apple Salad with Turmeric Dressing

Salad Ingredients

2 cupsFreekeh

1 cupbaby rocket

1beetroot
medium, peeled & chopped

½ cupchickpeas
boiled

1green apple
unpeeled & chopped

¼ cupparsley
roughly chopped

¼ cupfresh thyme

⅓ cuptoasted peanuts

⅓ cuppomegranate seeds

Step 1
Place the Freekeh in a pot with a lid with the cold water, bring to boil then reduce the heat to a simmer and cook for around 35 minutes, or until all the liquid has been absorbed, remove from the heat, put the lid on and leave for 10 minutes, to absorb some of the remaining liquid.
Step 2
To Prepare the dressing; Whisk together honey, vinegar, salt, pepper and turmeric in a small bowl. Slowly whisk in olive oil until well combined. Add lemon juice and additional salt & pepper to taste.
Step 3
To assemble the salad; In a medium bowl, combine the remaining salad ingredients, and coat well with half of the dressing, toss through mixed ingredients, the serve with leftover dressing on the side.
