For the Enhanced Peanut Sauce

125mlnatural peanut butter
unsweetened

2 Tbsplow sodium soy sauce

1 Tbspunseasoned rice vinegar

1 Tbspbrown sugar
reduced from original

2 tspchili garlic sauce
adjust to taste

1 Tbsplime juice

3cloves garlic
pressed or grated

1 Tbspfresh ginger root
grated

200gplain Greek yogurt
0% fat

2 Tbspwater
warm, as needed for consistency
For the High-Protein Wraps

4whole wheat tortillas
large, or protein tortillas if available

800glean chicken mince

2 tspolive oil

1 tspground cumin

1 tsppaprika

salt
to taste

pepper
to taste

200gcanned black beans
drained and rinsed

2carrots
large, peeled and grated

300gpurple cabbage
finely shredded

150gbaby spinach

1red bell pepper
large, thinly sliced

100gedamame beans
shelled and cooked
Instructions
Step 1
Prepare the enhanced peanut sauce: Whisk together peanut butter, soy sauce, rice vinegar, brown sugar, chili garlic sauce, lime juice, garlic, and ginger. Gradually fold in Greek yogurt until smooth. Add warm water as needed to achieve desired consistency. Set aside.
Step 2
Cook the chicken mince: Heat olive oil in a large pan over medium-high heat. Add chicken mince, breaking it up as it cooks. Season with cumin, paprika, salt, and pepper. Cook for 8-10 minutes until fully cooked and lightly browned. Remove from heat and let cool slightly.
Step 3
Prepare vegetables: Mix the black beans and edamame together for added protein and fiber.
Step 4
Assemble the wraps: Lay tortillas flat. Divide ingredients evenly among the 4 tortillas: 200g cooked chicken mince per wrap 50g bean and edamame mixture Handful of spinach Grated carrots Shredded cabbage Bell pepper slices
Step 5
Add sauce and wrap: Drizzle 3-4 Tbsp of the enhanced peanut sauce over each wrap. Fold in both ends of the tortilla, then tightly roll into a wrap. Cut in half diagonally before serving.
