Instructions
Step 1
Heat 2 tsp of oil in nonstick pan over medium heat. Add chicken and cook for 4 minutes on each side of until cooked. Transfer to plate to rest. Shred.
Step 2
Heat remaining oil in large saucepan over medium heat. Add leek and cook, stirring often, for 7 to 10 mins until very soft. Add carrots, celery, broth, and water. Civer and bring to a boil. Simmer for 5 minutes.
Step 3
Add shredded chicken and creamed corn, simmering for 2 to 3 minutes. Stir in parsley and pepper.
