Instructions

Step 1
start by chopping all veggies and set aside. in a large pan, heat 1 tbsp oil. add in 2 lb ground beef along with the onion and bell pepper. break apart ground beef and cook until about halfway done.
Step 2
add in seasonings, and continue cooking until there is no more pink.
Step 3
add in minced garlic and stir for a couple minutes until fragrant. set meat mixture aside.
Step 4
in the same (empty) pan, add remaining tbsp oil. add in sweet potatoes, fire roasted tomatoes, green chiles, and same seasonings mix until well combined. add in 1/4 cup of water and cover with a lid for 18-20 minutes, until potatoes are fork tender.
Step 5
add meat mixture back into the pan and combine everything together. top with 1 cup of cheese and turn off heat.
Step 6
cover with lid for 5 ish minutes or until cheese is melted. serve and enjoy!
